I am trying to find books about Muslims in America since 9/11 and the backlash towards them. I have only found one book at IU East.

We also have access to a number of electronic books through such databases as eBrary and EBSCO E-Books. Some of those titles include Journey into America: the challenge of Islam by Akbar Ahmed, Behind the Backlash: Muslim Americans after 9/11 by Lori Peek, and Muslims in the West after 9/11: religion, politics, and law edited by Jocelyne Cesari.
